Last week I posted this photo on Instagram and after receiving so many requests for the recipe I knew I needed to share it with everyone! It's from one of my favorite cookbooks, Oh She Glows, which I discovered after becoming vegetarian!
Ever since having children, I've begun to really enjoy cooking for our family. Cooking was a process I once absolutely dreaded, but now that I've become more comfortable in the kitchen, (and WOAH did that take awhile!) I've come to absolutely love the process of finding new recipes and sharing them with my family. Now between Matthew, a toddler, teenagers and a baby, it's not always easy to find meals which are a hit with everyone, but this flavorful vegetable soup is always a hit in our house!

Summer Harvest Tortilla Soup
1 tablespoon Extra virgin olive oil
1 Yellow onion; diced
3 large garlic cloves; minced
1 large Red bell pepper; diced
1 jalapeno or poblano; seeded, if desired, and diced (optional)
1 1/2 cups corn kernels
1 medium zucchini; chopped
1 jar or can crushed tomatoes
3 cups vegetable broth
2 teaspoons ground cumin
1/2 teaspoon chili powder
1/4 teaspoon Cayenne pepper
1 teaspoon fine-grain sea salt; or to taste
1 can black beans; drained and rinsed
1. In a large saucepan, heat the oil over medium heat. Add the onion and garlic and sauté for about 5 minutes. Season with salt and black pepper.
2. Stir in the bell pepper, jalapeno (if using), corn kernels, and zucchini. Raise the heat to medium-high and sauté for 10 minutes more.
3. Add the crushed tomatoes, broth, cumin, chili powder, and cayenne and stir well. Season with salt and pepper.
4. Bring the soup to a low boil and reduce the heat to medium. Simmer, uncovered, for 10 to 15 minutes, until the vegetables are tender. Stir in the black beans and simmer for 2 minutes more.
Garnish with your choice of toppings! I sprinkled some goat cheese on mine, but to keep it vegan use sliced avocado, toasted tortilla chips, fresh lime juice or fresh cilantro and enjoy!
