Kiwi Ginger Sorbet

Is there anything more refreshing than a fruity sorbet in the heat of summer?

While I was pregnant with Josie I craved mango sorbet the whole 9 months. The amount of cartons that passed through our freezer was unreal! I love how light and flavorful it is compared to ice cream, and can always satisfy my sweet tooth with just a few bites!

While browsing one of my favorite cookbooks (pictured right) I found this ginger and kiwi recipe and was instantly intrigued. So, i an attempt to savor the last beautiful days (weeks, please!) of this warm and sunny weather, I decided to try my hand at creating my own sorbet to share. 

While making my own seemed like a daunting task, it proved to be incredibly easy, and delicious! I made a double recipe and went VERY heavy on the ginger for added flavor, so feel free to add or subtract the ginger depending on how strong of a flavor you prefer!


- 2 oz fresh ginger root

- 1/2 cup sugar

- 1 1/4th cups water

- 5 kiwi fruit

- fresh mint for garnish


1) Peel ginger and grate finely. Place the sugar and water into a pan and heat gently until the sugar has completely dissolved. Add the ginger and cook for 1 mixture, the leave to cool. Strain the syrup into a bowl and chill until very cold. 

2) Peel the kiwi and blend until very smooth. Add the purée mixture to the chilled syrup and mix well

3) By hand pour the mixture into a container and freeze for 3-4 hours
